Preheat oven to 425°. Grease wide le creuset with olive oil, and rub chicken thighs with oil, salt, pepper, and herbs de provence. Bake chicken for 25 minutes, then add spicy harissa ratatouille (www.flickr.com/photos/donutgirl/6182147471/) and bake for another 10+ minutes. serve on spaghetti.
These Beets Taste Like Food

One of my favorite things to do is get people to try food they never would have tried before, and make it so they like it 🙂 I’ve brought roasted beet salad to a couple pot lucks and dinners and everytime it is a hit. When I made this particular salad one person said "Wow, I didn’t know beets could taste so good!" and another said "These beets taste like food". My work here is done 🙂
These Beets Taste Like Food Salad
4-6 beets (5 baseball sized beets, adjust up or down depending on how big your beets are) – red, golden or chiogga
1 tbs red wine vinegar (or balsamic, but not so great with golden beets – it muddies the color)
1 tbs olive oil
salt
pepper
1/4-1/3 cup thinly sliced red onion
1/3 – 1/3 cup toasted, chopped walnuts (or pecans, or even almonds)
2 oz more or less of crumbled goat cheese (or feta, if you are in a pinch)
Trim tops off beets but don’t cut into the flesh (use those greens in something else, they’re tasty!). Scrub the beets well and place in a preheated 400 degree oven. Bake whole and uncovered for about an hour, or until they are soft (ish – they never get soft like potatoes). Let cool a few minutes and then slip the skins off. Cut into wedges or slices.
Mix beets with onion and vinegar, oil and salt and pepper. Arrange on a plate, bed of greens or bowl and top with crumbled cheese and walnuts. Wait for your friends to praise you 🙂
