"There are few things as refreshing as fresh ginger. Spicy and sweet, fresh ginger ale will make you wonder how you ever drank the commercial stuff. There are a few easy ways to make ginger ale at home:
The first method is carbonating with a pressurized siphon, like this one that iSi makes. Simply peel some fresh ginger and blend it with sugar, water, a pinch of salt, and any other added flavors you’d like. Strain the mixture through cheesecloth to remove any large fibrous ginger particles. Transfer the un-carbonated mixture to the soda siphon, screw on the lid tightly and fill with C02 gas using the cartridges that come with the siphon. Shake well and pour over ice.
The other method is to flavor some sparkling water. Using a blender again, blend together fresh ginger, sugar, water, and a pinch of salt. This time though, use more sugar and less water to make an intense ginger syrup to flavor the water. Pour a bit of the syrup in a glass and add club soda. Stir to combine and enjoy. Homemade ginger ale is great on its own or mixed with a bit of whiskey. "
