Stage 4: Turn the tomatoes in excess of, smash them a bit, and cook above just-much less-than-medium-heat, right up until they get started to break down, 10 minutes, or so.
** four to 5 medium, ripe, in-season, tomatoes.
** three tablespoons olive oil (or butter substitute, such as Earth Balance)
** Peel the tomatoes, and slice them in half.
Phase 1: Heat the oil (or Earth Stability) in a big skillet above medium heat. Add the tomatoes, lower side down, and season with a pinch of salt and and a twist of cracked pepper.
