This mock tuna salad turned out wonderfully. I forgot how considerably I liked a good sandwich for lunch.
1 can chickpeas
2 Tablespoons mayonnaise
2 teaspoons mustard
1 Tablespoon onion, finely minced
8 slices of bread
Mash chickpeas right up until pleasantly lumpy. Mix in mayo, mustard, and onion. Use about 1/four of the mixture per sandwich.
Makes 4 servings.

Add peas to salted boiling water. Boil for 60 seconds. Do NOT more than-boil. Take away promptly, drain.
