combine 1 cup canned pumpkin, one egg, a tiny salt, and nutmeg in a bowl. fold in about a cup and a half of flour right up until the dough pulls away from the bowl but is even now a minor sticky. with effectively-floured hands, pull off handfuls and roll them on a properly-floured surface to a one inch rope. minimize the rope into one inch pieces, and roll them along the back of a fork to make indentations. location on wax or parchment paper, till prepared to cook.
drop into boiling water and fish out as they float to the top. then toast lightly in a saucepan of browned butter with sage. leading with parmesan and cracked pepper.
this was very good but missing something… I was anxious about the texture, but it really was fairly excellent — not too dense, gummy, or mushy. but it was not very as pumpkin-y as I had hoped for… a minor on the mild side. I additional some cayenne, which assisted… perhaps blue cheese? perhaps a small drop of some thing sweet, even?
