Kale and rice: recipe

Recipe for kale and brown rice (without the pig excess fat).
one) Separate kale from stems. Chop leaves coarsely. (Save stems to make vegetable stock.) Rinse, drain, and set aside.
two) Rinse 1cup brown rice. Drain.
three) Heat 1 tsp oil in soup pot. Add rice when hot. Stir constantly till fragrant.
4) Add 1 cup vegetable stock, one one/two cups water. Add 1 strip kombu. Bring to a boil.Cover, remove from heat. Let rest for 5 minutes.
5) Return to lower heat, covered. Cook for 45 minutes or till all water/stock is absorbed. Remove and discard kombu (or conserve for vegetable stock). Fluff. Set aside.
1)Place chopped kale and 1 cup vegetable stock in soup pot. Deliver to boi, minimize heat to simmer. Cook for 5-ten minutes, based upon wanted tenderness and shade. (Can be carried out whilst rice is cooking to conserve time.)
two) Strain stock from kale. (Conserve the stock!)
3) Toss with 1/four cup red beans, 1- 2 TBSP Balsalmic vinegar, and, to taste: sizzling sauce, sea salt, fresh cracked black pepper. Serve over the rice.

Cheesy Vegan Lasagna

Tonights journey was making an attempt this "Cheesy" Vegan Lasagna recipe from VegWeb. I had to make it following studying all of the rave evaluations, and it is just as great as they say. This was also my introduction to Nutritional Yeast…which along with Tofutti offers it it truly is cheesy taste without having the dairy.
I’m a lacto-vegetarian…so I never typically go very so far, but I am extremely happy with this dinner and am adding it to the rotation.
