A pupil at the college I function at is a fisherman and is taking the summer off to function on the coast. He called the other day to say he was going to be in Portland and did we want some rockfish. Uh, yeah! He brought us some tuna final fall when he very first commenced so I knew we were in for a deal with. We shared the cooler’s really worth of fillets about the office and I nevertheless came house with 3 rock fish packs and a ling cod! Wow!
The rockfish is accompanied right here by wild comfrey I collected in the park. I blanched it and then sauteed it in bacon grease along with some onion and garlic and some chard from my backyard.
All in all, I only paid for the seasonings and onions for this complete meal. And I ate like a queen!!
Garlic Lime Fish
1/four tsp salt
1/2-3/4 tsp black pepper
one/2 tsp onion powder
1 tsp garlic powder
one/2 tsp mild chile powder or paprika
1/4 tsp cayenne (or not)
1/2 tsp crumbled thyme, oregano or basil (just select 1)
four tbs lime juice
one/two cup chicken broth
fat for the pan
1/2 onion, sliced
Combine the spices on a plate and rub on the fish fillets (or chicken breasts!). Heat your fat in a stainless steel skillet and then lay the fish down in the hot pan. Enable it to cook for at least 4 minutes or right up until a excellent crust forms and the fish is commencing to appear company. Gently flip the fish and cook right up until the other side is browned as well. Cautiously eliminate the fillets to a plate and tent with aluminum foil to hold warm.
Sautee the onion slices (and possibly some fresh garlic) in the unwanted fat remaining in the pan. When the onion is translucent and possibly a little brown (watch to make confident the fond does not burn) deglaze the pan with the lime juice and chicken broth. Scrape to get all the goodies off the bottom and minimize the liquid a bit. Stir in some butter to finish the sauce and serve more than the fish.
