Chickpea Zucchini Patties with Minted Yogurt Sauce

1 pint/ 15.5-oz. can chickpeas, drained and rinsed
three/4 cup bread crumbs
2 modest summer season squash, grated
one small onion, grated
3 egg whites
one cup plain, unwanted fat-free Greek yogurt
1 Tbsp lemon juice
3 Tbsp fresh mint leaves, finely chopped
Mash chickpeas. Stir in bread crumbs, zucchini, onion, egg whites, and salt to taste. Type into eight separate patties.
Sauté patties until finally golden and crisp, 2 to 3 minutes per side.
In a modest bowl, stir yogurt, lemon juice, and mint until effectively mixed. Use to leading patties when served.

Preparing ‘scrambled’ tofu.
To the sauteed onions, garlic, mushrooms, and bell pepper, add:
Turmeric, oregano, dash mustard powder, cumin, smoked paprika, white pepper, Kosher salt, with a splash of water to mix collectively.(Tofu, lemon juice, and brewers yeast added later.)

Mediterranean Spring Feast

two crunchy tomatoes
½ deep green zucchini
one very good, strong onion
half a dozen fresh champignons
one clove crushed garlic
and just a little sprinkle of light balsamico vinegar.
Dice up the greens and the mushrooms. Include them to the skillet with each other with a tablespoon or two of olive oil. Include the salt, spices, garlic, and vinegar. Stir fry for five-10 minutes. Never overdo it! You want the veggies to retain some crunchy freshness and wholesome nutritional vitamins.
Serves a single hungry bachelor(ette). Smells like pizza, as well. =D Appreciate!
